Blueberry Scones

Scones are a typical elaboration of traditional British pastries. It is customary to serve them at tea time and accompany them with jam and clotted cream. There are many variants, this one with blueberries is one of them.

England, Ireland and Scotland dispute the origin of the popular scones. It is a small bread, barely sweetened, which is usually consumed at tea time, split in half and accompanied by sweet ingredients, such as clotted cream – a cream with a very high fat content – and jam; or savory, such as ham, cheese and even smoked salmon. The dough can simply be a mixture of flour, butter, eggs, chemical booster, a little sugar and milk, or it can have other ingredients such as dried or fresh fruits, herbs or cheese. In this case we will use fresh blueberries.

Ingredients of the scones with blueberries for 8 people

  • 250 g wheat flour
  • 200 g cold butter
  • 100 g blueberries
  • 50 g white sugar
  • 30 ml cold milk
  • 2 eggs
  • 5 g chemical booster
  • 1 teaspoon salt

How to make scones with blueberries

Preheat the oven to 180 ºC. In a bowl, mix the dry elements: flour, sugar, chemical booster and salt.

Add the cold butter cut into cubes and work with a scraper or fingertips. The objective is to achieve a sandblasting, so we are not interested in heating the mixture.

Beat the eggs and separate a small part to brush the scones before baking.

Make a well in the mixture and add the eggs and milk. Combine all the ingredients without kneading.

Add the blueberries and integrate with your hands.

Roll out the dough on baking paper until it reaches a thickness of approximately 3 cm. Cut into eight parts and chill in the fridge for 30 minutes.

Separate the triangles and brush them with egg. Bake for 20 minutes or until golden brown.

Let cool slightly before serving. They can be eaten warm – so they are very tasty – or cold. If you want to accompany them with something, they go well with fresh cream or cold whipped cream.
